Butter Cookie
(Thumbkins) Yield 2 Dozen

Ingredients

  • Butter - 6oz.
  • Granulated Sugar - 3oz.
  • 10x Sugar - 1.5  oz.
  • Eggs - 2 ¼  oz.
  • Vanilla - 0.5 tsp.
  • All Purpose Flour - 9 oz.

Preparation

  1. Add butter to mixing bowl and cream together with sugar using the paddle attachment of the mixer.
  2. Add eggs, slowly, until absorbed, then add vanilla.
  3. Add flour in a steady stream to the mixing bowl. With the butter and eggs. Mix completely.
  4. Place mixed dough on sheets of plastic wrap and roll into cylinders, tie ends and refrigerate. Chill.
  5. Unwrap chilled dough and slice into 1” slices, place onto ungreased sheet pan or parchment paper. Place a thumb print into the center of each cookie.
  6. Bake at 375-400 about 8- 10 min. cookie should be golden brown on the bottom.

When cookies are cool they can be filled with a variety of fillings such as assorted jellies, chocolate ganache, peanut butter or dried fruits. They can also be made into sandwich cookies.
