Butter Cookie
(Thumbkins)
Yield 2 DozenIngredients
- Butter - 6oz.
- Granulated Sugar - 3oz.
- 10x Sugar - 1.5 oz.
- Eggs - 2 ¼ oz.
- Vanilla - 0.5 tsp.
- All Purpose Flour - 9 oz.
Preparation
- Add butter to
mixing bowl and cream together with sugar using the paddle attachment of the mixer.
- Add eggs, slowly, until absorbed, then add vanilla.
- Add flour in a steady stream to the mixing bowl. With the butter and eggs. Mix completely.
- Place mixed dough on sheets of plastic wrap and roll into cylinders, tie ends and
refrigerate. Chill.
- Unwrap chilled dough and slice into 1” slices, place onto ungreased sheet pan or parchment
paper. Place a thumb print into the center of each cookie.
- Bake at 375-400 about 8- 10 min. cookie should be golden brown on the bottom.
When cookies are cool they can be filled with a variety of fillings such as assorted
jellies, chocolate ganache, peanut butter or dried fruits. They can also be made
into sandwich cookies.
